According to reports, at present, there are 126000 registered catering enterprises (including hotel catering) in the whole province, with more than 3 million employees. In 2016, the province's catering income reached 135.9 billion yuan, and the quality and safety of the catering industry improved in an all-round way. Cultural catering, healthy catering, fashion and special catering have become the dominant market.

The research and development of Hunan cuisine brings forth the new. Hunan cuisine research and development center has been set up by the provincial Food Association. Some municipal and state associations and Hunan cuisine enterprises have also established Hunan cuisine research and development institutions. They have carried out multi-level research and development on Hunan cuisine, including the innovation of traditional dishes, the introduction of dishes from other provinces, the listing of new materials and seasonings, the new requirements for nutrition and health, and the new tastes of the younger generation, as well as the research and development of different techniques of Hunan cuisine.
